Animated Recipe: Chili-Lime Baked Chickpeas

For our first installment of Animated Recipe—our take on cooking with GIFs—Brooklyn-based chef Nikki King prepares a tasty, salty snack you can easily prepare at home. Crunchy, baked chickpeas are a healthier alternative to potato chips or crackers, and the chili-lime flavoring is light and addictive. And, a bonus: they’re packed with protein!

Ingredients:

2 (15oz.) cans chickpeas

1 tablespoon chili powder

1 tablespoon nutritional yeast

½ teaspoon sea salt

2 tablespoons olive oil

1 lime, zest and juice

Preheat oven to 400°.

Rinse and drain chickpeas.

Pat dry chickpeas.

Combine chili powder, nutritional yeast and salt.

Add olive oil.

Add lime zest.

Add lime juice.

Whisk ingredients thoroughly.

Coat chickpeas with flavor mixture.

Spread chickpeas on baking sheet.

Bake for 35 minutes., shaking pan1-2 times throughout the baking process.

Remove from oven and allow to cool, on pan, for 1 hour. (They get crispier as they sit.) Snack away! Or, store in a sealable plastic bag at room temperature for 3-4 days.
